How To Make Carrot Cake Cookies At Home?

Carrot cake cookies is actually a European recipe which can satisfy your belly easily. The addition of carrots in desserts like cookies and cakes became popular during World War II. Ingredients

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup raisins or chopped nuts
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Cream cheese frosting (optional)
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar

Method

You have to preheat the oven to 350 F and then line up the baking sheet with parchment paper. Now, you need to take a medium bowl and then whisk together flour. Moreover, you have to add baking powder and baking soda. Also, you have to add ginger, salt and then nutmeg.

Furthermore, you have to take a separate bowl and then add cream together with brown sugar, butter and granulated sugar. This cream should be light but fluffy as well. You have to add the egg and vanilla extract together but keep mixing well. When you think that all things are mixed together properly then you have to add dry ingredients into the wet ones. Keep mixing until then they combine properly.

You have to stir in grated carrots and then rolled oats. However, if you like then you can also add raisins or nut until they spread equally in the dough. Take a spoon and start dropping the spoonful of the dough onto the prepared baking sheet. Make sure that you are leaving space between the cookies.

Now, you have to bake these cookies for around 15 minutes and then take them out when they become golden brown. Let them cool down at room temperature on the baking sheet and then serve them.
